Cornflake Christmas Wreaths

There are certain memories that stick out from my childhood.  Certain foods, certain activities.  I'm not always sure why I will remember some and not others.  One that forever sticks out in my mind is the Corn Flake Christmas Wreaths.  I remember eating the ones my mom would make.  As an adult, I had no idea how to make them but I knew I had to have them....so I altered a rice crispies recipe.  OH MY GOODNESS!  The taste flooded me with nastalgic goodness.  This year, I looked up the recipe on the internet...and it WAS there!  So yummy.  There's lots of recipes out there, but this one I found on cook.com.  I doubled their recipe and got this:

CORNFLAKE WREATH COOKIES

1/2 cup butter

4 cups marshmallows

1 tsp green food color

5 cups corn flakes

red hot candies

Melt (over low heat) the butter and marshmellows.


I contracted the labor over to local little people.  Stir your mixture till completely smooth.  Then add your food coloring.
Stir till well blended.  Take off heat at this point and add your corn flakes.
Blend well.  Use a large scoop (or your hands, if you're brave) and scoop onto a wax paper surface.
When the balls have cooled enough that the mixture doesn't burn, line your hands with some sort of greasy stuff cause this next part can get messy.  You will basically use your finger and push a hold in the center of your balls.  You might have to do a little reshaping to get it to not fall apart.



The next step is crucial!  It's what adds the super YUMMY to these cookies.  Place your red hots onto the wreaths in any fashion you please.  My daughter thought that it needed to be completely covered.  I put 3-5 on mine.

And then you eat them.  Oh my goodness how yummy these are!
That's the very last bite...in my mouth...all gone!
And yes, that is my pinky sticking out.  It has a mind of it's own.

Just found your blog. How fun!! And, these wreaths... what a blast from the past. I haven't seen these in years. My mom use to make them. Good memories! :) Thanks for posting.
